Eating to fight the flu!
It is the time of year were I try to make sure that the majority of the food we are eating is of benefit to the immune system. On Gabriola right now we like many parts of the country have a nasty flu making the rounds, so to fight it I made a yummy immune boosting soup this past Saturday night…
1 white onion diced
4 cloves garlic minced
2 carrots sliced
2 stalks celery sliced
4 stalks broccolette sliced
1 thumb ginger peeled and minced
1 cup frozen peas
1/2 bunch cilantro chopped
1/2 zucchini sliced
4 cups chicken stock (or veggie stock)
2 tbsp gen mai miso paste
1 tbsp sriracha (or more if you are not feeding it to kids)
1 tsp soy sauce
2 cups cooked quinoa
1/2 bunch kale chopped (or spinach/chard/seaweed)
Sauteed all the veggies in olive oil and then added stock, miso, sriracha, soy sauce and simmered until hot then add cilantro. Ladled over 1/2 cup quinoa per person…super tasty, very easy and best is the kids gobbled it up!
ps. we added a bit of sauteed tofu at the end which was perfect. Also if you don’t like quinoa try it with buckwheat soba noodles (make sure you cook them separately and add as serving like the quinoa. )
